It's a Serbian import that never left — Banat's sizeable Serbian minority kept it on local grills long after the modern border settled a few kilometers away.
A large, flattened patty of mixed beef and pork is grilled over open coals and stuffed into flatbread with onions, kajmak, or ajvar. It's sold at grill stands and fairs throughout Banat, where the Serbian border community is concentrated.
