Cross from Wallachia into Transylvania and the local brandy's name — and strength — changes at an invisible line: south it's the milder țuică, north it's pălincă, often distilled twice to nearly double the punch.

Pălincă is a strong, clear fruit brandy — usually plum, but also apple or pear — double- or even triple-distilled in Transylvania, giving it a higher alcohol content and cleaner finish than the softer țuică made further south. It's served neat in small glasses, often as a welcome drink before a meal.

Why it's made this way: Transylvania's centuries of Hungarian and Saxon influence shaped a distinct, stronger distilling tradition here than in the rest of Romania, making pălincă as much a marker of regional identity as of taste.
