Saramură de Peşte (Grilled Fish in Brine Sauce)

The fish is grilled first, then doused with a scalding garlic-and-oil brine right at the table — the sauce is made to sizzle on contact.

Whole carp or Black Sea fish are salted and grilled over coals, then finished with a hot poured sauce of oil, garlic, and paprika. Vendors along the Danube Delta and coastal towns serve it with a side of cornmeal mămăligă.

Why it's made this way: Dobrogea's identity is built on the Danube meeting the Black Sea, and this brined, grilled-fish tradition reflects a fishing economy that predates the region's tourism entirely.
