It's essentially a savory jam — fish and roasted vegetables cooked down for hours until they can be spread on bread with a knife.

Fish, often carp, is cooked down with roasted peppers, tomatoes, and onions into a thick, spreadable paste, sold by the jar at Dobrogea's markets and spooned onto fresh bread as a quick roadside snack.

Why it's made this way: It's a coastal variant of Romania's beloved autumn zacuscă tradition, swapping the usual eggplant-heavy vegetable mix for the Black Sea region's abundant fish.
