The cheese is often only hours old when it's sold — pressed that same morning at the sheepfold before being carted to market.
Fresh, unripened sheep's cheese (caş) is served in thick slabs with a spoonful of sour cream and a wedge of warm cornmeal mămăligă, sold by dairy farmers directly at Maramureş's weekly village markets.
Why it's made this way: Maramureş's economy is still built around small-scale sheep and dairy farming, and market day remains the main way families sell what the flock produced that week.
