It's traditionally distilled twice, not once — the first run is considered too rough to drink and gets discarded.

Plums or other local fruit are fermented and double-distilled into a strong, clear brandy, sold by the shot or small bottle at Maramureş fairs and markets, often poured straight from a hip flask into a tiny glass.

Why it's made this way: Maramureş's isolated valleys and orchards made home distilling a near-universal household skill, and horincă remains the region's most recognizable export in a glass.
