It's leavened almost entirely by whipped egg whites — no yeast, no baking powder, just muscle.
Cornmeal is folded with fresh cottage cheese, eggs, and a little sugar into a batter that bakes up dense and custardy, cut into squares and sold from bakery counters and market stalls across Moldavia.
Why it's made this way: It grew out of the same cornmeal-and-dairy pantry that shaped most Moldavian farmhouse cooking, turned sweet enough to sell as a treat rather than a staple.
