Poale-n brâu

Its name literally means "skirt hems tucked into a belt" — a nod to the way the dough corners are pinched up, like a woman gathering her skirt to work.

A square of yeasted dough is filled with sweetened fresh cheese and folded envelope-style before baking, giving it a distinct pinched, triangular shape unlike the round plăcintă sold elsewhere in Romania.

Why it's made this way: The folding technique and its name come straight out of Moldavian village dress and daily life, making it one of the more literally named pastries in Romanian baking.
