It's essentially a way of not wasting a single crisp scrap left over from rendering lard.

Pork cracklings (jumări) left over from rendering lard are kneaded straight into flatbread dough, giving the baked loaf a savory, crunchy crumb. It's sold warm at village fairs (oboare) alongside pickles and cured meats.

Why it's made this way: Nothing from the pig went to waste in rural Moldavia, and folding cracklings into bread dough turned a byproduct of winter pig-slaughtering into its own fair-day snack.
