These small, fiery mutton sausages date to at least the 15th century — local lore credits Serbian and Bulgarian refugees with introducing the hot pepper that gives them their kick.

Sheep meat is hand-chopped with suet, garlic, and hot pepper, stuffed into sheep casing, then wind-dried and beechwood-smoked. They're grilled and sold at markets around Buzău, where the village of Pleşcoi has made them for centuries.

Why it's made this way: Pleşcoi's sausages earned EU Protected Geographical Indication status, one of the first Romanian foods certified as a traditional product tied to a single place.
