Bucharest built an entire fast-food identity around a Middle Eastern import in the 1990s, piling in French fries and three sauces until it barely resembles the original.
Shaved spiced chicken or pork is wrapped in flatbread with cabbage, tomato, fries, and a trio of garlic, ketchup, and mayo-based sauces, folded and grilled on a plancha. Late-night windows across the capital sell little else.
Why it's made this way: The dish spread through Bucharest after 1989 as cheap, fast street eating, and locals customized it so heavily it's now considered a Bucharest specialty distinct from shawarma anywhere else in the region.
