Lángos

Lángos — street food from Transilvania, Romania

Its name comes from the Hungarian 'láng', meaning flame — it was originally baked at the mouth of a wood-fired bread oven, next to the flames, before frying took over.

A disc of yeasted potato dough is deep-fried until golden and blistered, then piled with sour cream, grated cheese, and garlic. It's sold hot from cart windows at Transylvanian markets and Hungarian-community festivals.

Why it's made this way: Lángos came into Transylvania with its Hungarian community and stayed a staple of the region's mixed Hungarian-Romanian market culture, from where it spread as 'langoși' to fairs across Romania.
