Vendors at Vladivostok's central market crack open live sea urchin right in front of customers, who eat the roe with a spoon straight from the shell within seconds of it being opened.

Along Vladivostok's waterfront and central market, vendors sell fresh Pacific crab legs, scallops, and sea urchin roe straight off the boats, often prepared simply with just a squeeze of lemon or a pinch of salt. It's eaten standing, shell in hand, minutes after coming out of the water.

Why it's made this way: The Sea of Japan's cold, nutrient-rich waters make the Russian Far East one of the country's richest seafood grounds, and dockside seafood snacking has long been a local specialty distinct from the country's landlocked food culture.
