The open-faced sandwich piled with bright orange salmon roe became such a symbol of Soviet prosperity that it's still the go-to way Russians show off at a holiday table.
A buterbrod is a single slice of buttered white or rye bread topped generously with red salmon roe, sold ready-made in train-station kiosks and market stalls across the Northwest, where Baltic and White Sea fisheries keep the roe cheap and plentiful.
Why it's made this way: St. Petersburg's long trade ties to Baltic and northern fisheries made red caviar an everyday kiosk item here well before it became a special-occasion luxury elsewhere in the country.
