The name comes from pyeonsu, a Korean dumpling, and the bun itself is an adaptation of wang-mandu, 'king dumplings', brought to Kholmsk on Sakhalin by Sakhalin Koreans in the early 1980s.

Pyanse are fist-sized steamed buns of soft yeast dough filled with finely chopped cabbage and seasoned meat, steamed until pillowy and served hot in paper wrap. Street kiosks across Vladivostok and Sakhalin sell them as an everyday grab-and-go lunch.

Why it's made this way: Pyanse come from the Sakhalin Korean community and spread to Koryo-saram communities, becoming one of the Russian Far East's most distinctive modern street foods, blending Korean technique with local ingredients.
