St. Petersburg has its own word just for this doughnut — pyshka, not ponchik — and locals will correct you if you use the Moscow term.

Pyshki are pillowy, deep-fried yeast doughnuts with a large open hole, dusted thick with powdered sugar and served hot alongside a glass of sweet milky coffee. The city's most famous pyshechnaya, on Bolshaya Konyushennaya Street, has been frying them the same way since the late 1950s.

Why it's made this way: St. Petersburg's doughnut culture diverged from Moscow's linguistically and stylistically long ago, and the surviving Soviet-era pyshechnaya shops are treated today as living pieces of the city's food heritage.
