It's cooked completely dry, with no oil or butter on the griddle at all — the flatbread gets its color purely from direct heat before it's folded shut like a half-moon.

Kystyby is an unleavened flatbread rolled thin, dry-griddled until lightly speckled, then filled with mashed potato or millet porridge and folded in half. Tatar market stalls and home cooks serve it warm, brushed with melted butter on top.

Why it's made this way: The dish reflects the practical, grain-and-potato-based cooking of Tatar villages, where a dry griddle and simple pantry staples could still produce a filling, portable snack.
