Goat, not beef, is the traditional brochette meat of choice here — tougher to chew, but the cut regulars actually ask for.

Skewers of marinated goat, beef, or fish are grilled over open charcoal flames at roadside stalls and evening grill spots, seasoned with garlic, ginger, chili, and lemon. They're typically served with fried plantain, boiled potatoes, or grilled tomato and onion.

Why it's made this way: Cattle and goats sit at the center of Rwandan agricultural life, and grilling meat over open flame at communal roadside spots turned an everyday protein into a shared evening ritual over beer or soda.
