Vendors roast the cobs unshucked over open coals until the kernels blister and char, then peel the husk back to use as a handle.

Whole corn cobs are grilled over small charcoal braziers until the kernels blister and darken, then sold hot off the coals with a rub of salt or chili. Vendors set up braziers on street corners and near markets throughout Kigali, especially as the maize harvest comes in.

Why it's made this way: Maize is one of Rwanda's staple crops, and roasting it whole over coals turns a cheap, plentiful harvest into one of the city's most impromptu, grab-and-go snacks.
