Vendors near markets and taxi parks strain it straight from a simmering pot of ginger and cardamom rather than steeping a teabag per cup.

Black tea is simmered with milk, water, sugar, and warming spices like ginger and cardamom until it turns deep amber. It's poured hot from a kettle at roadside kiosks and morning market stalls across Kigali, often paired with mandazi or chapati.

Why it's made this way: Rwanda grows some of East Africa's most prized tea in its highlands, and icyayi turned that crop into the everyday warm-up drink of choice at bus stops and market corners.
