Vendors ladle the dough straight from plastic buckets into hot oil near bus parks like Nyabugogo, selling it by the piece to commuters before sunrise.
Mandazi are lightly sweetened, triangular pieces of fried dough, fluffy inside with a golden crust. In Kigali they're sold from baskets and buckets at bus stations and roadside stalls, eaten plain or dunked in hot spiced tea.
Why it's made this way: The recipe traveled inland from the Swahili coast, but it settled into Kigali's commuter culture as the quick, cheap bite that fuels the morning rush at taxi parks.
