Ibirayi (Fried Potato Wedges)

The dish's Kinyarwanda name comes from 'uburayi' — 'that which comes from Europe' — even though it's now one of the most Rwandan snacks going.

Young, unpeeled potatoes are halved, boiled in water seasoned with ground spices, then deep-fried until the skins turn brown and crisp. Vendors at Musanze's bus park scoop them into paper cones for travelers heading to or from Volcanoes National Park.

Why it's made this way: Musanze's volcanic soil makes it Rwanda's Irish-potato basket, and this twice-cooked, spiced version of fries turned the region's biggest crop into its signature bus-park snack.
