Igikwanga (Chewy Cassava Snack)

Its appeal has almost nothing to do with flavor — it's prized instead for its dense, chewy texture, closer to jerky than to bread.

Fermented cassava is pounded and pressed into a firm, chewy block with very little taste of its own. Sold in small pieces at markets around Musanze, it's nibbled slowly on its own or alongside a spoonful of beans.

Why it's made this way: With little flavor by design, igikwanga works as a filling, low-cost snack that stretches a cassava harvest into something portable to chew on between meals.
