Rwanda's milk bars are literally called 'inzu y'amata' — 'house of milk' — and Nyagatare's milksheds record some of the country's highest production per farm.

Raw milk ferments naturally over a day or so into a tangy, thick drink somewhere between yogurt and buttermilk, served chilled with honey or sugar stirred in on request. Milk bars — simple rooms furnished with stools and a hand-lettered menu — serve it as the default order in Nyagatare, at the heart of Rwanda's cattle country.

Why it's made this way: In a region where cattle-keeping shaped daily life for generations, ikivuguto became the drink that fills the same social role coffee or beer plays elsewhere, sipped slowly at a milk bar rather than gulped down quickly.
