Milk bars post both drinks on the same hand-painted wall menu, so a single stool can serve either the fermented or the fresh version depending on what a regular orders.

Fresh raw milk is boiled and served scalding hot in a glass, unsweetened unless a customer asks for honey or sugar stirred in. It sits on the same milk-bar menu as ikivuguto in Nyagatare, ordered by regulars who prefer it straight rather than fermented.

Why it's made this way: Boiling the milk makes it safe to drink quickly rather than waiting out a day of fermentation, so inshyushyu became the milk bar's fast option for anyone stopping in for a short break.
