Rubavu's fishing boats head out mostly at night, timing their catch so tilapia and sambaza both arrive fresh on shore by early morning.
Chunks of fresh Lake Kivu tilapia are threaded onto skewers, marinated, and grilled over charcoal until the skin blisters. Lakeside restaurants and roadside grills around Rubavu serve them with fries, rice, or a wedge of the region's avocados.
Why it's made this way: While goat brochettes dominate elsewhere in Rwanda, Rubavu's lakeside location makes fish the skewer of choice, built on tilapia pulled straight from Lake Kivu each morning.
