Ripe bananas are simmered in coconut cream and water, sometimes thickened with arrowroot starch, until they break down into a warm, mildly sweet dessert soup, served at the end of a family meal.

Why it's made this way: Suafa'i makes use of Samoa's abundant bananas and coconuts, and remains a familiar way to close out a big family gathering in and around Apia.
