Serbian burek is a coiled pastry of thin dough layered with minced meat, cheese, or potato, baked in a round pan and cut into wedges. It's sold at bakeries from early morning, wrapped in paper and eaten with a small cup of drinking yogurt to cut the richness.
Why it's made this way: Records trace burek's arrival to Ottoman-era bakers in the city of Niš, and the yogurt pairing likely developed as a practical way to balance out such a heavy, oily pastry first thing in the morning.
