The grill itself is often nothing more than a wire rack propped over a smouldering pile of dried coconut husks.

Whole reef fish, split and scored, are grilled directly over a coconut-husk fire at stalls around Gizo's waterfront market, the husk smoke lending the flesh a distinct char that charcoal alone doesn't give.

Why it's made this way: Coconut husks are an abundant, free byproduct in a province built around copra and fishing, so cooking over them is both practical and gives Western Province's grilled fish its distinctive smokiness.
