Kokoda is a raw fish salad found across the Solomons' lagoon communities: cubes of fresh reef fish, usually tuna or snapper, are marinated in lime juice until they turn opaque, then folded through coconut cream with diced onion, tomato and chilli.
Why it's made this way: With reef fish caught fresh daily around Gizo and the Marovo Lagoon, marinating rather than cooking it made sense long before refrigeration, and the dish is now shared across the wider Pacific under variations of the same name.
