The batter is made with chickpea flour instead of wheat, and whole tiny shrimp — shells included — get folded in raw before frying.

Tortillitas de camarones are thin, lacy fritters made from a chickpea-flour batter studded with whole baby shrimp, fried until the edges turn crackling and brown. Cádiz market stalls and freidurías serve them stacked hot, straight from the fryer.

Why it's made this way: The recipe comes out of Cádiz's bay, where cheap tiny shrimp and a chickpea-batter frying tradition combined into one of Andalucía's most distinctive fried snacks.
