The name comes from marmita, the actual pot fishermen cooked it in aboard their boats, so the dish is literally named after its own cookware.

Marmitako simmers fresh bonito or tuna with potatoes, onions, peppers, and tomato in a thick paprika-tinted broth, the potatoes broken rather than sliced so they thicken the stew as they cook. Basque festivals and market stalls ladle it into cups during tuna season.

Why it's made this way: Basque tuna boat crews created it at sea using whatever fish and vegetables were on board, and it later moved ashore as a festival dish tied to the region's bonito fishing season.
