Ordering Txakoli comes with a show: bartenders hold the bottle high above the glass and let the wine splash down from arm's length — not for theatrics, but to wake up its natural fizz.

Txakoli (Basque: txakolina) is a bone-dry, faintly sparkling white wine with sharp acidity, made along the Basque coast since at least the 15th century. It's traditionally poured from a height into wide glasses in pintxo bars.

Why it's made this way: The high pour, called escanciar, aerates the wine and releases its natural spritz — a serving ritual as distinctive to the Basque Country as the wine itself.
