Txistorra

It's stuffed into a much thinner casing than regular chorizo specifically so it cooks through in barely a minute over open flame.

Txistorra is a long, thin, fresh pork sausage seasoned with paprika and garlic, grilled quickly until the skin blisters, then sliced into a length of bread. Street fairs and market grills across the Basque Country cook it fast and sell it hot.

Why it's made this way: Its thin casing made it ideal for quick grilling at festivals and markets, where vendors needed to serve a crowd without long cook times.
