The same fiery stir-fry treatment gets applied to whatever the boats bring in — prawns, sausages, even plain fish — but it's the cuttlefish version Negombo's seafood shacks are best known for.

Fresh cuttlefish rings are stir-fried hard and fast with onion, tomato, capsicum and a heavy hand of chili flakes into a glossy, sweet-spicy tangle, served as a bar snack or side dish at Negombo's beachfront seafood restaurants alongside the day's other lagoon catch.

Why it's made this way: The dish grew out of Negombo's seafood-heavy restaurant scene as a way to turn an abundant, cheap catch into a fast, punchy plate for evening crowds.
