The mud crabs go from the lagoon's shallow water to the curry pot within hours, landed at the same jetties and Lellama fish market that give Negombo its reputation as Sri Lanka's seafood capital.

Mud crabs pulled from Negombo Lagoon are cracked and simmered in a rich coconut-milk curry, served up at seafood shacks and market-side eateries clustered around the Lellama fish market where fishing boats land their catch each morning.

Why it's made this way: Negombo's brackish lagoon has been one of the island's richest crab and prawn grounds for generations, and the town's food identity, and much of its economy, still runs on what comes off its boats before sunrise.
