Dalapalt

Photo coming soon

Dalarna's version of the potato dumpling is dense enough that one is usually considered a full meal on its own.

Raw grated potato and flour are formed into large dumplings around a core of salted pork, then simmered until cooked through. They're served whole, cut open, and topped with melted butter and lingonberry preserves at Dalarna's farm markets and festival stalls.

Why it's made this way: Like Norrland's palt, the dish was built for storing calories through harsh winters on isolated Dalarna farms, where potatoes kept far better than fresh meat.
