This wobbly, custard-like dessert is traditionally made from beestings — the thick first milk a cow produces right after calving — and it naturally sets without any eggs or gelatin added.

The rich, protein-heavy first milk from a newly calved cow is baked gently in the oven until it firms into a golden, flan-like custard, then served warm with sugar, cinnamon, or berry jam. It's a short-season treat tied to spring calving on Dalarna's dairy farms.

Why it's made this way: Because beestings milk is only available for a few days after a cow calves, the dish became a fleeting seasonal marker of spring on the region's traditional dairy farms.
