Baltic island dumpling gluttony is basically a local sport nearby — one island's 'Dumpling Day' features a full-on eating contest each summer.

Grated raw potato dough is wrapped around a filling of diced pork belly and onion, then simmered until the dumpling turns firm and slightly translucent. It's served split open with melted butter, cream, or lingonberries at island markets and farm stalls.

Why it's made this way: The dumplings began as festive, once-a-year food for Baltic island communities before Lent, when a big pot of them could feed the whole household.
