Gotland has more sheep than people in some parishes, so it's no surprise the island turns its lamb into its own distinct grilling sausage.

Coarsely ground lamb is seasoned with allspice and pepper, stuffed into natural casing, and grilled or pan-fried until the skin snaps, then served with flatbread and mustard. It shows up at Gotland's summer markets and roadside grill stands.

Why it's made this way: Sheep farming has shaped Gotland's landscape and diet for centuries, since the island's dry pastures suit grazing better than most crops.
