Only roe hand-harvested from a narrow stretch of the Bothnian Bay between Piteå and Haparanda is allowed to carry the name — it was the first Swedish food ever to win EU Protected Designation of Origin status.

The tiny, orange-golden eggs of the Baltic vendace are hand-rinsed and lightly salted right after the autumn catch, then spooned onto blini, toast points, or boiled potatoes at markets and roadside stands across Norrbotten. It's eaten cold, straight off a spoon or a cracker.

Why it's made this way: The short, cold-water harvest window and painstaking hand-extraction — about two teaspoons of roe per fish — turned a local fisherman's catch into one of Sweden's most prized delicacies.
