Frozen reindeer meat is shaved paper-thin, then quickly sautéed in butter with a splash of water until browned, and piled over mashed potatoes with lingonberries and pickles. It's classic fare at Sami winter markets like Jokkmokk's centuries-old fair.

Why it's made this way: Reindeer herding has anchored Sami life across Norrland for generations, and searing thin-sliced meat fast over high heat let herders cook a filling meal with minimal fuel out on the tundra.
