Renskav is sold in shops as ready-made frozen shavings cut from blocks of frozen meat, so it goes straight from freezer to pan.

Frozen reindeer meat is shaved paper-thin, then quickly sautéed in butter with a splash of water until browned, and piled over mashed potatoes with lingonberries and pickles. It's classic fare at Sami winter markets like Jokkmokk's centuries-old fair.

Why it's made this way: Reindeer herding has anchored Sami life across Norrland for generations, and thin-shaved frozen reindeer became the everyday way northern Swedes cook the meat quickly at home and at markets.
