Bohuslän Skaldjurssoppa

Bohuslän's cold, nutrient-rich waters produce some of Europe's best langoustines and mussels, which is why a single bowl of this soup can hold four or five different shellfish.

A tomato-and-cream broth is loaded with local mussels, prawns, langoustine, and whitefish, then ladled out with crusty bread at harbor shacks up and down the Bohuslän coast. Portions are built for slurping straight from a paper cup or bowl at the quayside.

Why it's made this way: Bohuslän's fishing villages built their economy on shellfish exports, and turning the day's mixed catch into a single hearty pot was the practical way for boat crews to eat well.
