You can watch your fish get filleted to order at Gothenburg's cathedral-shaped fish market, Feskekôrka, which has sold nothing but seafood from the same Gothic hall since 1874.

Herring fillets are dredged in rye flour, pan-fried until golden, and served with a warm, creamy onion sauce, boiled potatoes, and lingonberry jam. It's counter food at Gothenburg's fish halls and harbor stalls.

Why it's made this way: Gothenburg's fishing fleet made herring the everyday protein of the working waterfront, and frying it fresh at the fish hall became the fastest way to serve it hot.
