Mbege

Quinine tree bark is sometimes stirred into the fermenting brew, a traditional touch believed to add bitterness and help preserve it.

Ripe bananas are mashed and fermented, then combined with sprouted, sun-dried finger millet for a second fermentation that gives the drink its cloudy look and tangy, mildly alcoholic kick. Traditionally brewed by Chagga families around Kilimanjaro and served communally, it's also become a popular drink in Arusha's bars.

Why it's made this way: Mbege brewing is a marker of Chagga social life, traditionally served at ceremonies and gatherings where sharing a drink from the same vessel signals community and trust.
