Pigeon peas are slow-simmered in coconut milk with garlic, cumin and chili into a soft, fragrant stew, ladled from big pots at breakfast stalls across Dar es Salaam each morning. It's scooped up with mahamri or maandazi rather than eaten with a spoon, the coconut broth soaking into the fried bread.
