Vendors judge doneness by tapping a piece against the pan; a hollow knock means the starchy centre is cooked through.

Boiled cassava chunks are fried until the outside turns crisp and golden while the inside stays soft and starchy, then served hot with a wedge of lime and a scoop of kachumbari. In downtown Dar neighborhoods like Kisutu and Upanga, vendors run cassava stalls from early morning through the evening rush.

Why it's made this way: Cassava became a reliable, drought-resistant staple crop across East Africa generations ago, and frying it street-side turns a subsistence food into one of Dar es Salaam's most common grab-and-go snacks.
