Kyela's rice paddies share the same fertile lowland with the district's cocoa farms, which alone grow roughly 80 percent of Tanzania's cocoa.

Grown in the well-watered lowlands of Kyela district near Lake Nyasa, this fragrant rice is a staple served across Mbeya's market eateries, typically alongside fish, beans or a meat stew. Its reputation for quality has made "Kyela rice" a recognized regional product in markets well beyond the Southern Highlands.

Why it's made this way: The Kyela district's rivers and wetlands, fed by the Mbaka, Kiwira and Songwe, make it one of the two leading rice-producing districts in the Southern Highlands, and the rice's name has become a mark of quality on menus and market stalls across Tanzania.
