Mwanza locals often call tilapia "sato" rather than the standard Swahili term, a nickname specific to the Lake Victoria region.

A whole tilapia, called sato around Mwanza, is grilled over charcoal, then coated in a garlicky coconut sauce brightened with lime and chili. It's a favorite lakeside meal sold at fish stalls near Mwaloni Market and at restaurants overlooking Lake Victoria.

Why it's made this way: Tilapia has been fished from Lake Victoria for generations, and coating the grilled fish in coconut sauce shows how coastal Swahili cooking techniques have spread inland to lake communities far from the Indian Ocean.
